Every bag we send carries a roast date you can set your week by. Here's the part of the job we'd do for free.

Fresh-roasted coffee blooms — it swells and exhales when hot water hits it. If your grounds just lie there, they've been sitting on a shelf longer than they'd like to admit. Ours don't lie there.

We roast by sound as much as by software — first crack tells you things a probe never will. Every batch is cupped the same afternoon, and the ones that don't sing don't ship. It happens. We drink those ourselves, sulking slightly.
The Roasts
One bright, one steady, one dark. We rotate origins with the seasons, but the personalities stay put.

Our daily — Colombian and Guatemalan, milk chocolate, toasted hazelnut, zero drama. The roast everyone says is "for guests" and then finishes alone.
Dark, but listened to — Sumatran, molasses, cedar, a long smoky finish. Stands up to milk; stands up to Mondays.
