The HearthThe fire is lit at three in the afternoon. Service begins when it settles down.

A Note from the Kitchen

Fire is the only honest clock in my kitchen. It does not care about your reservation, your photograph, or your hurry — it gives the leek exactly what the leek needs and not a minute more. My work is mostly listening. The flame does the talking; I just set the table close enough for you to hear it.
